Shear Modulus (G¢¥) of Surimi Sol Measured by Various Viscometric Methods and its Relationship to Gel Properties in the Composite System

Shear modulus was calculated from the difference between apparent viscosity (¥ç_(a) and the consistency (¥ç_(c) obtained from the flow behavior curve of surimi sol using various viscometric methods (capillary extrusion, rotational disc spindle and rotational cylindrical spindle). Capillary extrusion rheometry and rotational disc spindle viscometry showed the similar trend of the shear modulus of surimi sol. Changes in shear modulus of surimi sol were a function of the type and level of ingredient as well as the viscometric method. The mojulus from rotational disc (r=0.83) and cylindrical (r=0.83) spindle viscometry correlated well with the compressive force of surimi gel.
